Smoked Salmon Scrambled Eggs

Leapin’ lizards? More like “leapin’ salmon”! Did you know that this fish’s name comes from the Latin word “salmo” or “salire,” which loosely translates to “to leap?” Given how salmon make their way upstream to reproduce, we can definitely see how they earned the moniker.

Check out this delicious breakfast dish that will have you jumping for joy!

INGREDIENTS

  • 2 large eggs
  • 1 scallion, sliced
  • 1 tsp. capers, rinsed
  • 1 oz. smoked salmon, chopped
  • 2 tsp. reduced-fat cream cheese

DIRECTIONS

  1. Lightly beat eggs in a small bowl until combined. Stir in smoked salmon, cream cheese, scallion and capers. Coat a small nonstick skillet with cooking spray and heat over medium. Add the egg mixture and cook, stirring often, until scrambled, about 3 minutes.
